· INTRODUCTION
Doodhi methi muthiya is a popular Gujarati snack made of basic ingredients like grated dudhi (lauki), methi (fenugreek) leaves atta, semolina, besan, and regular spices. When all these ingredients are combined in the correct proportion, it results in a soft and tasty Gujarati muthiya. It has a great shelf life so you can make it and store it in the fridge. This muthia is very tasty and serve as a tea time snack, for breakfast, or even as a light dinner along with Green Chutney and masala chai.
· INGREDIENTS
1 CUP WHEAT FLOUR
HALDI POWDER
RED CHILLI POWDER
JEERA POWDER
HING POWDER
GARAM MASALA POWDER
AJVINE (CAROM SEEDS)
OIL
SALT AS PER TASTE
GINGER, GARLIC AND CHILLI PASTE
CORIANDER
METHI FINELY CHOPPED
BOILED RICE 1 cup
BOTTEL GUARD GRATED
SUGAR
BUTTERMILK 1 CUP OR AS NEEDED
· RECIPE
Take 1 cup wheat flour now add all the spices 1 tsp Haldi, 1 tsp red chilli powder, 1 tsp jeera powder, a pinch of hing, 1 tsp garam masala, 1 tsp ajvine (carom seeds), 1 tbsp oil, salt as per taste, ginger garlic and chilli paste, finely chopped coriander, add methi (fenugreek), 1 cup boiled rice, 1 finely grated bottle guard now mix all the things properly and also add buttermilk as needed and make a dough. Now make the muthiya shapes and steam for 20 to 25 minutes on high flame.
For tadka add 2 tbsp oil to the pan then add 1 tbsp sesame seeds and 2 tbsp tal and 8 to 10 curry leaves then add muthiya and mix well. Cook for 2 to 3 minutes. And they are ready to serve healthy and tasty doodhi methi muthiya…
